Green, sour mangoes are commonly used for making chutney, although some enjoy the tart flavor raw. Green mangos are harvested immature and sour to be used green, they will not ripen. The unripe flesh of the Green Mango is popular in Thailand, India and Malaysia. Widely used in Asia including shredded for thai salads. These are small and green in colour, picked before fully ripe. Grated green, its flesh contains enzymes useful for tenderizing meats. In a sun-dried, fine-powder form, Green Mango makes up a gray-brown seasoning (called Aamchur) used in Indian and Asian cooking for its tart flavor and to tenderize meats. The Green Mango is often used in combination with vegetable and lentil dishes. Baby mangos are approximately 2-3″ in length and 2″ in diameter, with very soft or unformed seeds.
